Greens are near and dear to true Southerners' hearts. It is rare to find properly cooked greens outside of the South. Many of our Southern guests are thrilled to find greens. Johnny Rebs' greens are cooked long and slow with smoked bacon, onion, celery, apple cider vinegar and a pinch of red pepper. The juice greens are served in is referred to as "pot likker." "Potlikker" is valued as a delicacy. The Southern Nectar of the Gods, it is alleged to possess aphrodisiacal powers. We recommend eating greens with a shake or two of pepper sauce (it's what the pepper sauce is for!
